The alcoholic fermentation of Refosco marc takes place in the must, i.e. at the winery. The fresh marc comes from selected suppliers and is stored in silos for a few months immediately after the first racking. In this crucial phase it is very important that the marc is preserved airtight with a careful covering of the silage. In this way a favourable fermentation climate can be maintained and perfect preservation for a few months can be guaranteed. Distillation is carried out with direct steam in a discontinuous distillation flask with eight copper kettles. Aging in stainless steel tanks for at least one year gives this grappa a better balance compared to freshly distilled grappa. The red grape marc and its particular alcoholic fermentation create a distillate characterized by a round and balanced bouquet.Tasting notes:Colour: crystal clear. Nose: Sincere, fragrant.
